Here’s a quick and easy-to-prepare recipe if you want to eat a piece of delicious pizza but don’t want the carbohydrates associated with flour-based crusts regardless of whether or not they contain gluten.
Some of you may recall Alisa and my trip to the popular New York eatery Quality Italian a few years ago. We ordered the Chicken Parmesan and what arrived like more like a wood-fired pizza than chicken. That’s because the “crust” was made of chicken breast! I recreated this dish at home and shared the recipe on Facebook.
Fast forward to this weekend. Many of you know there’s an amazing new pizza product on the market that took this concept to a new level. And they’re delicious and convenient to just pop in the oven and enjoy a high-protein low-carb pizza alternative. But some of you may be deterred by the cost. If you’re one of these people you’ll LOVE this recipe.
I found a way to make this pizza-alternative at home at a fraction of the cost. And you can get creative with it as well. Here's the simple way.
What you’ll need:
Food processor
6 oz. skinless chicken breast
3 oz. parmesan cheese
1 large egg
Tomato sauce
Shredded mozzarella cheese
Sheet pan
Coconut or olive oil
Here's what you'll do:
Cut the chicken breast into ½ inch slices
Cut the parmesan cheese into cubes
Preheat your oven to 400 degrees Fahrenheit
Place the chicken breast, parmesan cheese and one egg in the food processor. Process on highest speed for 7 to
8 minutes until contents are reduced to a paste-like consistency.
Coat sheet pan with coconut or olive oil
Spread contents of food processor in middle of sheet pan to create a ½ inch thick round disc resembling a pizza crust. I used a rubber spatula

Bake in oven for 20 minutes till the disk is firm and appears cooked through.
Remove from oven and let cool for a few minutes and then remove it from the sheet pan using a spatula
Now place the crust upside down on the same sheet pan 
Spread tomato sauce on the crust and leave an edge like a pizza crust
Add shredded mozzarella cheese and spread on pizza
Place sheet pan with pizza on it back in the oven at 400 degrees Fahrenheit and bake till mozzarella cheese is melted. Approx. 8 – 10 minutes.
Remove from oven, slice and serve! 
Complete prep and cook time under 40 minutes from prep to served
