I’ll admit it- I still eat dairy! Greek Yogurt is one of my favorite treats to enjoy. I also enjoy Icelandic Yogurt however, for the sake of this recipe we will concentrate on the Greek version. It’s not quite as thick as the Icelandic version making it eaiser to spread on the cookie sheet.
With this recipe anything goes. Depending on your personal taste, you can make this into whatever you want it to be. I used the plain 0% fat yogurt as my blank canvas and added whatever was available in my pantry. As a word of caution, check the ingredient label, so many of the fruit added yogurts have high sugar content. And, why would you want to buy fruit added when you can add your own, fresh fruit?
So, let’s get started…
You will need a flat cookie sheet, parchment paper, plain Greek yogurt, I used, fresh organic blueberries, raspberries and raw slivered almonds. Also, whatever you’d like to sweeten the yogurt with. I used 2 tablespoons of raw organic maple syrup. I also added a splash of almond extract!
-Place the parchment paper on your cookie sheet.
-2 cups of Greek Yogurt
-Mix your sweetener of choice (Maple Syrup) in a bowl with the yogurt until combined. I added my almond extract here as well. Other choices-stevia, flavored stevia extracts such as strawberry or chocolate, honey, organic natural applesauce are just a few that comes to mind.
-Spread the mixture onto the parchment paper spreading it into a thin layer. (Not so thin that the pan shows through.)
-Top it with your favorites. I used- 3/4 cup organic blueberries and 3/4 cup organic raspberries. (Berries are a heavily sprayed crop, if available always buy organic.)
-Sprinkle with almond slivers
-Place another piece of parchment paper over the top.
-Place in freezer overnight or, for at least two hours. Once thoroughly frozen brake into pieces. Store it in the freezer in an airtight container or freezer bag.
It’s that simple! This grab & go snack is a winner. As for other choices for toppings and flavors the list is endless. The time of year may come into play as well. I’m thinking of fall, the yogurt mixed with pumpkin and pumpkin pie spice, cinnamon, maple syrup and a sprinkle of pecan pieces. Yum! I can’t wait to try this version!!
